I have got another Biscoff recipe. This time something no one can resist.

The title itself is a mouthful: Biscoff biscuits with a fluid core, oh my!

You get a spicy, caramel flavour and you get a soft core. At least I could not ask for more.
The core will harden after one – two hours, but the biscuit is still very tasty, very tasty.

Since it is this time of the year, I sit in front of my recipe books, Pinterest and Yummly, and look for recipes I can try and bake with Biscoff.
I once saw a similar recipe with Nutella so I thought what is good with Nutella, is good with Speculoos.

(Recipe) Biscoff Biscuits with a Fluid Core

Ingredients

14 Biscoff biscuits (ground)
100 g Biscoff spread
1 egg
80 g sugar (white)
70 g sugar (brown)
120 g butter
1 tsp vanilla extract
1/2 tsp cinnamon
1 tsp salt
1/2 tsp baking powder
150 g flour

(Recipe) Biscoff Biscuits with a Fluid Core

Instructions

Prepare the filling. Make 14 small speculoos dabs on parchment paper and freeze for about an hour.
14 – because the recipe will make 14 biscuits.

Now put all the dry ingredients, both sugars, cinnamon, salt, baking powder and flour in a bowl and mix.
Put all the wet ingredients in another bowl and mix thoroughly. Add the dry mixture little by little.

Form a small ball and press a small hole in the middle. Fill with frozen speculoos pieces and form to a ball.

Now bake for 12 – 14 minutes in the preheated oven at 180° Celsius.
Let them cool down and bite, you will see the soft core. So good.
