Estonian egg butter is a hearty, quickly prepared spread. You only need eggs, butter, spices and cottage cheese. Munavõi, as it’s called in Estonia, is a nice addition to your breakfast or brunch table.

As a regular reader you might know that I have friends living in Finland. Every time I visit them, I try to learn and see as much as possible. That also means eating! The last time I’ve been there I tried an egg butter. Simple recipe: butter, eggs, salt, done. So good! While eating I thought how good this must be with chives, spices or other ingredients.
Later on this trip to Finland, we decided to take the ferry to Estonia where we stayed a few days. In the supermarket I found Munavõi, the Estonian version of an egg butter, which contains, surprise, chives and other ingredients. They also added cottage cheese.

At home I had to recreate and share it.
This version is still easy to prepare and has only a few ingredients. It’s for everyone who likes savoury spreads.
It could also be the base for your own creations. Change the seasoning, add other herbs or leave out the cottage cheese. Writing this, next time I have to add some garlic.

(Recipe) Estonian Egg Butter with Cottage Cheese

Ingredients

4 boiled eggs (hard boiled)
225 g cottage cheese
6 Tbsp butter
2 Tbsp chives (diced)
seasoning like salt and pepper

Instructions

Start with cutting the hard-boiled eggs in half. Take out the egg yolks and put into a bowl. Add the butter to the yolks and mix thoroughly.
Now dice the rest of the eggs, cut chives in roughly one cm long stripes put into a bowl and add cottage cheese. Lastly, add the butter mixture and fold in carefully.

Try it with home-made bread or a heavier wholemeal bread. A perfect combination!

Refrigerated, the butter lasts a few days.
