(Recipe) Speculoos Muffins with Biscoff Icing

Speculoos, or Biscoff as many of you know it better, is my favourite eat-it-with-a-big-spoon spread.

It is a super yummy caramel, spicy, vegan spread, which also comes in biscuits form. And if I had to choose to give up everything except for one thing. The one thing would be speculoos (sorry homemade bread, but no choice).

I like to experiment with the spread and add it in different recipes, such as biscuits, cakes, pastries or muffins.

The muffins itself contain the caramel spread, as well as the icing. And in the inside you find a crunchy biscuit surprise! It is basically heaven for everyone who loves Biscoff.

I usually do not get hungry when I write my blog posts but here I am, editing the pictures, putting together the ingredients – I am SO hungry and I am craving some biscoff… leaves the desk to sneak into the kitchen…

(Recipe) Speculoos Muffins with Biscoff Icing

Ingredients

220 g flour
180 g sugar
160 g butter
160 g speculoos
1 1/2 tsp vanilla extract
100 ml cream
100 ml milk
3 egg whites
1 1/4 tsp baking powder

Optional: almond biscuits

Biscoff-Icing

200 g margarine
450 g powdered sugar
160 g speculoos

Instructions

Whisk all the dry ingredients in a bowl and add speculoos, egg whites, butter, cream and milk. Mix until everything is smooth.

Fill muffin liners about three quarter and bake in preheated oven for 20 minutes at 180° Celsius.

Optional: I put half of an almond biscuit on the bottom of the liners before I added the dough.

Let it cool and prepare the icing.

Put margarine, speculoos and sugar in a bowl and mix carefully, so you are not standing in a powdery cloud. Add water for a better consistency.
Now ice the muffins. Take piping bag and swirl the cream onto the cooled muffins.
