The Culinary Trip around the World stops in Croatia.

Focaccia is a staple, not without reason. Soft, rich in flavour, diverse, filling. Leave or add your favourite spices, load it with olive oil. Invite your friends and serve it as a side, share it with your loved one or devour it bit by bit on your own.

(Recipe) Tomato-Olive Focaccia

The recipe for focaccia isn’t necessarily Croatian, but I learned to love it there. Each time I’m in Croatia I have to get it, as often as possible. I don’t know if I mentioned it, but in my opinion Croatia is one of the few countries that manages to bake delicious bread and rolls.

I actually get up early and make the effort to visit nearby bakeries to try my way through the local delicacies.
Not to forget the tasty savoury snacks for lunch.

On the last day of my trip to Bol I took pictures of all the things I want to recreate at home, starting with Tomato-Olive Focaccia and here’s my simple homemade version.

Ingredients

230 ml lukewarm water
1 package yeast
2 tbsp olive oil
360 g flour
1 tsp salt + more
3 tsp rosemary

12 tomatoes
8 olives

Instructions

First, mix lukewarm water with the yeast and let it work.

In the meantime put your flour, salt, 2 teaspoons rosemary and olive oil into a bowl and stir, then add the yeast mixture and knead thoroughly. It helps to use your hands.

Let rest for at least an hour.

Knead on a floury surface. Take your oven-save pan and divide dough into two pieces. Form into pan. This helps the focaccia to get a nice shape.

Again, let rest for about half an hour.

Now push the tomatoes and olives gently into the dough. Quantity depends on the size of your tomatoes.
Take one tablespoons of the olives liquid and spread over the focaccia.
Finish with half a teaspoon rosemary and salt. Repeat with the other half of the dough.

Now bake at 180°C for about 20-22 minutes in the preheated oven.

The butter you see in the video is a simple homemade mixture: butter, rosemary, salt and chilli.
