A vegan burrito bowl is an easy and fresh dish you simply cannot fail to love. It’s also a fantastic dinner for every beginner in the kitchen.

(Recipe) Fresh Vegan Burrito Bowl

Lately, I’m loving all kinds of Mexican dishes. I love the classics, but also, like I’m showing you today, a fresh and vegan variety of a burrito bowl. I must admit that I  prefer the bowl sometimes over the original burrito in a tortilla sheet.

What’s your favourite Mexican dish?

Ingredients

200g brown rice
1 can kidney beans
1 small can corn
1 bell pepper
handful small tomatoes
1/2 red onion
2 cloves garlic
3 stalk coriander
cumin, salt and pepper
1 lemon

The dish is perfect for using up remaining veggies or tofu.
Try to change things up, different vegetables, add avocado or lime.

Instructions

Dice garlic and onion.
Bring water to boil, cook rice accordingly.

Tip: Try quinoa instead of rice.

Sauté onion and garlic in a pan. Cut bell pepper and tomatoes and add to pan, cook for about 5 – 7 minutes.
Heat up kidney beans and corn.

While the rice is cooling down, chop coriander and fold in the rice. Season with salt, cumin and pepper.

Arrange your bowl. Take the rice as base, add one or two spoons of every ingredient.
Serve with lemon juice.
