The Culinary Trip around the World stops in the Netherlands.

Food from Holland? Fries, pickled herring and spiced cookies? Yes, but there is more.
Every time I am visiting the Netherlands I try to do as much as possible. The Western European country is so small, but yet so multifaceted. Same with food, even though I found my favourites pretty early: Speculoos (oh my!), fries and spiced cake.

Due to its Colonialism, the Netherlands got their hands on all the exciting spices you find in Southeast Asia quite early. This way they developed a bunch of amazing recipes like the Dutch Spice Cake for which you need cardamon, ginger and cloves. Rye flour added, you get a delicious breakfast cake.

And I want to show you how to make Ontbijkoek (literally translated Breakfast Cake), the Dutch Spice Cake. Instead of baking a cake, I made them in muffin tins. But cake is cake. You will find the instructions for the typical cake down below.

(Recipe) Vegan Dutch Spice Cake

Ingredients

100 g flour
1 tsp baking powder
1/4 tsp ground cinnamon
1/4 tsp ground cardamom
1/4 tsp ground coriander
1/4 tsp ground ginger
1/4 tsp ground clove
pinch of salt
30 g brown sugar
50 g agave syrup
75 ml (oat)milk

If you use rye flour you will get closer to the original cake.

Instructions

Preheat the oven at 150° Celsius.

Put all the dry ingredients, spices, flour, baking powder, salt, and sugar in a bowl and mix.
Add agave syrup and milk, mix again.

Give dough in a greased muffin tin and bake for 20 minutes.

Note: If you want to eat it as the traditional cake, triple the amount of ingredients and use a cake tin. Bake for 50 minutes.

The cake gets better the longer you let it rest. It gets a nice sticky crust, you might know from the bakery.
But, alas, we are never able to wait long enough. The muffins are so good I am glad I could take a few pictures before they were gone.
